Recipe for Eggs with Swiss Chard and Shallots
(Serves 1 person)
Ingredients:
2 eggs, scrambled
½ cup Swiss Chard, chopped into ¼” pieces
2 Tbsp. green shallots or onions, chopped fine
¼ cup nitrate-free lunch ham, sliced fine (optional)
½ tsp. parmesan cheese, grated (optional)
Cooking Instructions:
Heat skillet on medium heat and get skillet good and warm, but not smoking. Add shallots, ham and swiss chard. Stir ingredients in pan until swiss chard begins to wilt. Add eggs and cook until eggs are no longer runny. Spoon onto plate and top with a sprinkle of parmesan cheese.
**may substitute spinach or other favorite green for swiss chard ***may substitute feta for parmesan cheese
