(serves 3-4)

Ingredients:

1 c. long grain or germinated brown rice, rinsed

½ c. chopped green shallots

½ c. chopped almonds

4-5 cloves garlic

3 Tbsp. butter or butter substitute

4 c. sliced swiss chard leaves (approx. 3-4 leaves)

2 c. water

¾ tsp salt

Cooking Instructions:

Heat sauce skillet on medium for 2-3 minutes.  Place butter in pan and add rice.  Let rice cook 4-5 minutes, or until it starts to turn brown.  Add shallots, garlic and almonds just as rice starts to get brown and stir to keep from sticking.  Add 2 cups water, cover and let simmer on medium to low heat.  Add salt and pepper to taste.  Stir every so often to make sure the rice cooks evenly and doesn't stick.  Add swiss chard just as water is almost absorbed by the rice and continue to cook until all of the water is absorbed.

**Spinach, Kale or any other greens may be substituted for swiss chard.
